I think you made a good choice, Elwar. You've invested enough to get a good machine that provides convenience for getting the knack of milling flour. You can invest more later if you find you want something other than basic flour.

Do you have a bread machine? A bread machine combined with the grain mill makes for super simple healthy bread making.

Don't be discouraged if you first couple loaves aren't perfect. It might take some recipe adjustments to figure out what works for you.

I'll probably look into a bread machine next...any bread I've had from a machine has just been unimpressive. It comes out in a big stiff cylinder...at least the one I had.

My sister uses her bread machine primarily to kneed dough and then bakes it in the oven. A kitchen-aid dough hook may be just as good - but I haven't tried it. For me, the convenience of dumping ingredients in and taking out bread is worth the imperfections in how they bake the bread. Our bread machine is supposed to be able to cook jam too. We have yet to try that feature. In the summer time, a bread machine will mean less heat in the kitchen. A hot over in the winter can be a good thing.

I make all my own bread with my sourdough starter. Natural yeasts aren't compatible with bread makers. They must be allowed to rise in their own time, and each batch may require a different method of kneading.

I hand knead all my dough, and only bake in cast iron or stoneware bread pans. It works better that way. I have a dough hook for the kitchenaid, and use it for mixing the starter, flour, salt, water mix, but once a good ball is created, I take it out and hand knead until the desired consistency is reached.

If you are looking for local wheat, try going to one of the area feed a grain stores or an elevator.

Yup, just like you do beans and other natural crop grown food. Wheat is wheat no matter where it comes from. Just because people associate a feed and grain store with animals, it doesn't mean the grain is any different than that sold at the store.

Always be sure it's at least animal feed and not chemically treated for seed.

Elwar, There used to be a feed store out on SR52 just before you get to Hicks Road. No idea if it's still there or not. I was up at mine yesterday picking up some rye. A 50# bag was $9.97. Also, my Walmart carries 5# bags of berries in their ethnic section, (not baking goods, go figure).

Hmm, I never thought to look in there. I go in there for my chicken feed but haven't noticed wheat.

I went to Whole Foods last week in Tampa and bought a few pounds to test things out at $1.50 a pound.
