    The jury is in and the verdict is final: Processed meats like bacon, salami and sausage all increase breast cancer risk. A metanalysis of all 15 previously conducted studies on the subject, published recently in the International Journal of Cancer, has confirmed that eating processed meat is associated with a 9 percent increase in the risk of developing this type of cancer.

    While there has been a lot of hype about the risks of eating red meat, this study found no connection between red meat consumption and increased breast cancer risk, confirming what Mike Adams, founder and editor of Natural News has been saying for 15 years. The increased risk is specific to processed meats because of their high nitrite and nitrate content.

    “When we look at all the evidence together there is an increased risk of breast cancer with diets high in processed meats,” Dr. Mariana Stern, lead author from the University of Southern California’s Keck School of Medicine, told CBS Miami.

    What’s the problem with processed meat?
    The additives that take meat from healthy to dangerous are known as nitrites and nitrates. These chemicals are added to processed meats to preserve them, prevent the growth of harmful bacteria, add a salty flavor, and give cured meats their pink or red color.

    Though our bodies naturally contain these chemicals and they are present in high amounts in certain vegetables, the problem comes in when they are exposed to heat in the presence of amino acids. When this happens, they turn into entirely different compounds, known as nitrosamines, which are potent cancer causers.

    Since processed meats are high in protein and therefore a source of amino acids, adding nitrates or nitrites to them and then exposing them to heat provides a perfect environment for the production of these dangerous nitrosamines, and therefore dramatically increases cancer risk.

    Processed meats also increase risk of other cancers
    Back in 2015, the World Health Organization classified processed meats as a group 1 carcinogen, meaning there is sufficient evidence to prove that they cause cancer.

    The U.K.’s Guardian reported at the time:

    Health scares are ten-a-penny, but this one was very hard to ignore. The WHO announcement came on advice from 22 cancer experts from 10 countries, who reviewed more than 400 studies on processed meat covering epidemiological data from hundreds of thousands of people. It was now possible to say that “eat less processed meat,” much like “eat more vegetables,” had become one of the very few absolutely incontrovertible pieces of evidence-based diet advice – not simply another high-profile nutrition fad. As every news report highlighted, processed meat was now in a group of 120 proven carcinogens, alongside alcohol, asbestos and tobacco – leading to a great many headlines blaring that bacon was as deadly as smoking.

    Mike Adams warned back in 2004 that processed meats cause colorectal cancer, brain tumors and leukemia. And in 2005, he warned that they increase the risk of pancreatic cancer by 67 percent:

    Consuming processed meats increases the risk of pancreatic cancer, says new research conducted at the University of Hawaii that followed nearly 200,000 men and women for seven years. According to lead study author Ute Nothlings, people who consumed the most processed meats (hot dogs and sausage) showed a 67% increased risk of pancreatic cancer over those who consumed little or no meat products.

    Even the "uncured" bacon is still cured, it's just that the FDA won't allow them to call it cured unless they use the chemical nitrates.

    I think the natural stuff tastes better anyway, I buy that applegate stuff pretty regularly and also other brands that use celery salt.

    Celery salt is even higher in nitrates. Also stay away from other natural sources like spinach, carrots, and beets along with radishes and celery. "Uncured" still has nitrates in it- possibly even more than the "cured" version.

    So it’s simple, right? To minimize your risk of getting stomach, colon or pancreatic cancers, simply stay away from sodium nitrate or sodium nitrite.

    But sodium nitrite is generally a good thing. It makes a wonderfully effective preservative, and it keeps away pesky bacteria like the one that causes botulism. More to the point, that great taste that is a part of bacon and hot dogs and other cured meats actually comes from sodium nitrite.

    And remember, sodium nitrate occurs naturally in things like spinach. And carrots. And radishes. And beets. And celery.
    Which brings us back to those trendy packages of uncured bacon made without nitrates or nitrites. It is safe to bet that a lot of the people who buy them, and feel good about themselves for doing so, fail to notice the asterisk.

    The asterisk comes after the phrase “no nitrates or nitrites added,” and here is what the small print says somewhere else on the label: “except for those naturally occurring nitrates and nitrites in celery powder” or sea salt or the like.

    Celery powder, which is the powdered form of celery juice, sounds like a good thing. It’s natural. Celery is good for you. Adding it can only improve your health.

    Except it doesn’t. Celery powder is positively loaded with sodium nitrate. Depending on the soil and conditions in which the celery was grown, celery powder can actually add more sodium nitrate to bacon than the meat-packers do when they add pure sodium nitrate.

    And because the celery powder is technically considered a flavoring agent instead of a preservative, which is what it is being used for, the uncured bacon does not have to have the vitamin C or vitamin E added to it.

    So obviously, the smart thing to do is to stay away from uncured bacon. Which would be a fine idea, except that it tastes so good.

    As is the case with most things, a little bit is not going to kill you. You can continue to enjoy your bacon, whether it is cured or uncured, if you don’t eat too much of it.

    You should at least do a cursory review of the article in the OP...

    I had a question about the "uncured" bacon using naturally occurring nitrates, but nitrates in and of themselves aren't bad according to the article:

    Although might want to take this into consideration:

    All meats that contain nitrates (added for curing or preserving) also contain ascorbic acid, a form of Vitamin C, as required by the USDA. Some manufacturers play it extra safe and add alpha-tocopherol (a form of Vitamin E and an antioxidant). Both of these inhibit the formation of nitrosamines and the levels of this carcinogenic chemical are significantly lower than what they were in the 1970’s, when the USDA realized that nitrates could be harmful.

    I looked for the actual study and it seems that they found no link except for Latin women. And that link was limited. It also does not note the quantities people were consuming (they were asked on a survey what they had eaten in their entire lives and did they have cancer- can you remember what you were eating ten years ago?)

    Nitrates (food additives) are a different compound from Nitrites (the chemical compound used in the above post). They react differently.

    What Are Nitrates and Nitrites?
    In order to understand what nitrates and nitrites are, we need to delve into a bit of chemistry.

    These are two types of compounds, consisting of a single Nitrogen atom bonded to a number of Oxygen atoms.

    Nitrate: 1 Nitrogen, 3 Oxygens - Chemical Formula: NO3-
    Nitrite: 1 Nitrogen, 2 Oxygens - Chemical Formula: NO2-
    So... Nitr-a-tes have 3 oxygen atoms, while Nitr-i-tes have 2 oxygen atoms.

    It seems that the nitrates themselves are relatively inert, until they are turned into nitrites by bacteria in the mouth or enzymes in the body.

    Nitrites are the key players here... they can either turn into Nitric Oxide (good) or nitrosamines (bad) - which we will cover in detail shortly (1).

    Nitrites are the reason cured meat is pink or red. Nitrites turn into Nitric Oxide, which reacts with the oxygen-binding proteins in the meat, changing its color (2).

    Without additives like nitrites, the meat would turn brown very quickly.

    Nitrates and Nitrites Are Found in All Sorts of Foods... and Produced by Our Own Bodies

    Nitrates and nitrites are frequently added to processed meats like bacon, ham, sausages and hot dogs.

    They function as preservatives, helping to prevent the growth of harmful bacteria.

    They also add a salty flavour and improve the appearance of the meat products by giving them a red or pink color.

    We do know that consuming processed meats is strongly linked to an increased risk of cancer in the digestive tract, and many people believe that the nitrates/nitrites are the reason for that (3, 4).

    However, they are also found naturally in foods like vegetables, foods that are generally perceived as healthy and linked to a reduced risk of cancer (5, 6).

    We went through that already. Because something can work along with something else does not make that second item the first item. If iron works with oxygen in our blood is iron oxygen? If vitamin C works in conjunction with other nutrients does that make vitamin C those other nutrients? No.

    I guess my main question.. (admittedly Ive been busy doing some other things and did not easily see the explanation in the nih report) is, "preventing nitrate tolerance" mean preventing absorption of nitrates or lessening the body's ability to keep uptaking nitrates without resulting in some sort of reaction that makes people stop the action... thats what i was going with....

    its not part of Vitamin D as far as i know.. but that might explain why vitamin d takes calcium out of bones...of course vitamin d is a bit odd, since its considered by some to be a hormone... also theres about 1,000 known isomers of vitamin d. so they are the same molecule with different mechanics... strangely enough they activate vitamin d receptors on cells in different fashions and medical science cannot explain it.

    The best thing I found to do is take calcium/mag, Vitamin D3 and K3 (MK7) together to get the optimum benefits.
