I peel apples for pies/applesauce and dehydrate the peels with a little cinnamon for snacks. I only eat sweet potatoes, don't peel those.

    That is too cool, Suz.

The only way the apple skin is good is when you buy organic. Otherwise it soaks in the lovely pesticides.

As far as potato skin being nutritious-- it is a myth.

In the human alpha-solanine and alpha-chaconine (another glycoalkaloid in potatoes) toxicity begins with gastrointestinal disturbances, vomiting, diarrhea, abdominal pain, then followed by neurological disorders at higher doses, low blood pressure, fever, rapid weak pulse. The symptoms listed are associated with sublethal doses

Little information is available on the chronic toxicity of glycoalkaloids. There are indications that alpha-solanine and other potato glycoalkaloids can accumulate in tissues.

Solanine "poisoning" has a variety of symptoms. These symptoms may include: nausea, diarrhea, abdominal cramps, fever, headache, weak pulse, rapid breathing, hallucinations, delirium, and induce a coma.

I don't know if potato skins are healthy, healthier or whatever, I don't really care. Potato skins are one of the most tasty things on earth! I feel sorry for all the poor souls that peel their potatoes and miss out on all the natural goodness that surrounds a potato... I never really liked regular boiled taters so I stopped doing that, now I only fry/bake them or grill them with the skin on and then make mash, you can scoop out the mash and you're still left with skins that you can make crisps or whatever out of (or fill them with something).. Just a bit of tasty advice!

No, I am talking about potato skins and the poisons on it. The only way to stop that is by boiling them.

Potatoes: more dangerous than they look

There is something peculiar about potatoes. It appears that their story of origin, the domestication by Neolithic Peruvians in some distant past, has an inherent weakness. Early potatoes were too poisonous to eat.

Potatoes contain substantial amounts of two glycoalkaloids, namely solanine and chaconine that can wreck havoc on a person’s bowels. These chemicals disrupt gut epithelial barrier integrity and aggravate or maybe cause inflammatory bowel disease (IBD). Frying potatoes concentrates glycoalkaloids and IBD incidence is highest in countries where fried potato consumption is also highest.[1] That’s something to chew on.

[It is also worth noting, for the sake of curiosity, that Thomas Jefferson is credited with ‘inventing’ French fried potatoes [2] and also as we’ve previously mentioned, he wrote about the batter fried fish that he ate in London and apparently served the same at Monticello.[3] We might call Jefferson the ‘Fish and Chips President.’]

It is potato skins in particular where these chemicals concentrate and while it makes good sense for individuals with IBD to avoid all potatoes, they should especially avoid potato skins and even more so fried potato skins [4] .

Hehe, I always look forward to your thread every morning, some are serious news, tabloid stuff and them these sort of threads. I mean, how else I am going to figure out a way to peel that many apples in a short time? Actually, I am going to trying it this thanksgiving. I am making an apple pie from scratch and by that I mean everything but the pie crust.

Here is another cool food hack video for my potato lovers.
