Thread: Does anyone use almond, coconut, rice, or tapioca flours?

    Does anyone use almond, coconut, rice, or tapioca flours?

    I want to make cookies and perhaps cakes with one of these, but Im not sure which to use. Originally I was going to use rice, then I decided almond, now I just read about coconut, and I remember seeing tapioca flour on something.

    What are the ups and downs of each and brandwise? Ive used Bobs Red Mill Quinoa and thats great. Bobs has all of these flours as well.

    Bob's almond meal is too course for cookies but if you can find a finer almond flour it works great. With coconut flour you need to use ingredients to soften the coconut taste. Not hard to do because it is pleasant and subtle to begin with.
