Typically the better the quality, the more oils are in the plant, less water and it tends to be easier to dry and cure without molding, but I have definitely smelled mold in batches before that weren't dried and cured properly.
The initial cough typically isn't from the mold, it is usually because it has more oils in it and it is higher quality.. it causes more of a "stinging" that leads to a cough. But if you are coughing afterward, like 10 minutes or more later and it is more of a tingling/tickling sensation rather than a stinging sensation in the lungs I think that would be a sign of mold or something with the drying process. I have experienced that before, I will be smoking a batch and there is no cough or sting initially, but later on my lungs feel tickly/tingly and I cough.. but it is rare in my neck of the woods.
