Next thing we know, veterans courts become government courts for anyone in the government, and then those people don't even need to go to court and are above the law.

Juvenile Courts, Tax Courts, Family (Eugenic) Courts...

Why not just take things like PTSD into consideration in a normal trial?

Because if veterans could sue for real damages, then there would be a real cost assigned to warfare.
